I'm trying to get more fermented food into my diet and like kimchi - does anyone have any delicious veggie recipes that I can use kimchi in? Thank you! xx

I prefer Indian fermented pickles over Korean as they’re tastier and simpler. Apple cchundo and carrot/green beans fermented in lemon juice is amazing.

Is the Indian one called achar?

I'm really new to the fermented food stuff so appreciate the recommendations - the apple chundo sounds delicious!

I often make Ramen and then stick a spoonfull of Kimchi in and its also really good on egg fried rice

It's delicious by itself or on some good sourdough bread - hope you enjoy it :)

Now the weather's meant to be getting colder, I'm hoping to use it in more warming recipes... plus it's exciting to cook with someone I've never cooked with before!
