Moondog seeks advice on making best chips ever. Do you do the twice fried thing? How about soaking to remove starch? What is all that about?

Forgive Dot. I am nearly over trauma although having occasional McFlurry flashbacks.

Mayo, or 'hens' period sauce' as CD puts it.

YOu don't neet to soak - but deffo wash them or they will stick together.

Also dry them afterwards (use a clean tea towel) or you will get too much water in your oil and 1. make it froth up and 2. cool it down too much.

Technically you should increase temp of oil for the second fry - but I have never bothered as my fryer was a single temp.

The double frying is actually really convenient as you can fry the chips once as you put everything in the oven. Then you know they will only take 3 mins to crispen up which is much easier to control and co-ordinate.

For years I did it as I describe. I now put up with scummy oven chips as I don't have a fryer

The first plunge will actually lower the temp of the oil. What you are doing when you lift them is allowing the oil to heat back up again. Also the chips carry on cooking inside (making them fluffy) and then you crisp the outside with a short blast.

One of our best chippies used to blanch a whole batch, and then crispen up a portion at a time - to order.

I have just made oven chips

maris piper, peel, slice into quarter inch slices or slightly thicker, lay in baking tray of shallow hot oil, salt lightly, put in oven for 10 mins, turn, cook for further 10 mins.
temp approx 200C

no twice cooking faff about, no spitting hot oil over the hob

Do the twice frying thing. That's the way they cook them in Belgium and the chips here are far better then anywhere else.

Right ladies,have done chips as directed.
They were fantastic.
Have also consumed vast quantities of Champers. Dh unconscious upstairs with kids and i am Skyping all and sundry.
