Does anyone have a tasty recipe for a sausage pasta please? DS is a very fussy eater but he heard of it recently and would like to try it.

I use a jar of creamy tomato sauce from aldi, Chuck that in over the pasta, chopped cooked sausages and whatever veg I have left over. Usually onions peppers peas sweetcorn and tomatoes. My fussy children love it. I cover it with grated cheese

Onion, garlic, tomato purée, sausage in pieces, chopped tinned tomato, Worcestershire sauce, beef stock. Cook, put in oven to bake with lumps of mozzarella on top. Serve over pasta.

No pesto. Weird. I could have sworn.

I take a pack of nice sausages, eg 6 Lincolnshire sausages or Italian sausages. Anything really.
Chop an onion (or leek or shallots) if your DS will eat it, fry around in a large pan. After a few minutes break the raw sausages up by hand into chunks (eg each sausage into 4-6 bits, like unevenly shaped meatballs) and fry around in the pan until they go golden brown and mostly cooked through. Add anything else your DS might like to the pan - we add mushrooms, garlic, chopped pepper, and stir around with the sausage till it’s all soft. You don’t have to add anything else if you don’t want.
Then tip in two tins of chopped tomatoes and simmer (if you need less sauce use one tin). Everything all in the same pan. Add fresh or dried herbs - Italian seasoning, basil, thyme, pepper, salt, whatever you have really. I add frozen peas in about 5 mins before I’m ready to eat and let them cook through.

Serve with whatever pasta you like. Penne seems to work well. It’s nicer if you stir the sauce through the pasta with a spoonful of the pasta cooking water, before serving.

Mine don’t like tomatoey sauces so my recipe is very simple. Remove sausages from their skins and break up in the pan. Fry until well browned and slightly crispy. Set aside and fry an onion in the same pan. Add crushed fennel seeds and dried chilli if you fancy it. Once the onion is soft add the sausage meat back in. I add leafy greens to get some veg in (calvero Nero is first choice but kale or spinach are tolerated by by children) and once the greens are cooked down I add the cooked pasta and plenty of Parmesan.

My kids like the Nigel Slater one above with mustard. I leave the chilli out, and put less mustard in their portions. It’s delicious.

There is a delicious and easy River Cafe one I would recommend. You can add extra ingredients as you wish or keep it simple. You can find it on google.

I use this one and the first time I tried it I instantly knew it was the most delicious pasta dish I've made, I actually prefer it to a Bolognase. The flavour of the sausagemeat mixed with fresh rosemary and the sweetness is heavenly.
