Does anyone have a good tried and tested recipe? I have such a craving for it but I don’t want it to be disappointing 😅

I use stock made from a chicken carcass plus an extra stock cube and soy sauce. Cook the noodles in it, add left over roast chicken plus a handful of spinach and chopped spring onion at the end.

Which style? I like the Chinese takeaway type and do this one.
Also like This one although I use egg noodles.

Both greatly improved with a good homemade stock

Chef John's Homemade Chicken Noodle Soup

This homemade chicken noodle soup is Chef John's soul-warming and deliciously simple recipe that uses a flavorful homemade roasted chicken stock.

The best imo is knorr out of a packet in a caravan in a bowling gale. Appreciate that might not be what you're after!

TheLadyIsAVamp · 26/08/2024 22:11

@longdistanceclaraclara love that one! Had it today actually although I use less water and eat it all to myself 🐷

littleoldme3 · 26/08/2024 22:11

@TheLadyIsAVamp Ahh, I didn’t even think to specify 😅 silly me! Definitely more the second one. Lots of carrots/celery etc and just a really tasty broth.

@longdistanceclaraclara @TheLadyIsAVamp Is this the packet that actually supposedly makes a pot of soup? 😅 I mistakenly bought it one day thinking it was a single cup-a-soup type thing and ended up with a tonne of soup 😂

@littleoldme3 this is with rice but I've done it with noodles. It's very good 😊 👍 Avgolemono

I don't have a recipe as such, but here's what I do:

Sautée your carrots, celery, onion.
Add your stock. Bring to a boil.
Add your noodles/pasta.
Add your chicken (pre cooked).
Add fresh parsley, salt (lots) and pepper.

All quantities to taste.

I think that's it Smile

it calls for pappardelle rather than noodles but Ottolenghis chicken and parmesan soup with pappardelle sounds like the sort of thing you are looking for. It's really delicious. I found it made more than advised, plenty of shredded chicken and stock leftover which could be used to bump the portions up from 4 (already big servings), or frozen and saved for another use.

That looks amazing @SummaLuvin , I've just bought the book based on looking at it from your post.
