Hello!

ok so I think I’ve made homemade soup once, and I can’t remember a single thing.
so I’m a soup newbie.. hit me with your best, easiest recipes and if they’re quick that’s a bonus. Currently pregnant, with a toddler so anything easy and fast is always welcome.

flavours; not too fussed, I like most things! Love tomato’s and love potato and leek.

Leek and potato, finely chop and onion, 2 big leeks, some potatoes in small chunks
Sweat in a pan with the lid mostly on with butter, salt and black pepper, when softish add some stock, simmer. About 20 mins. Then when cooled slightly blend with a stick blender to your desired consistency, I leave some lumps. Could also add bacon bits at the beginning if you like.

Pea and ham, same re an onion and a small potato for thickness, i add the ham half way through this, add stock, simmer for 10 mins, frozen peas for another 10. Blend as above. Season as you go.

Make a big pan so you can freeze it for easy meals another time.

Top freezing soup trick, get a tie handled bag, put in the bottom of a tupperware box, pour in, tie and label. Freeze. Remove tupperware after a day, you can stack them like bricks to save space
