Inspiration for make-ahead school lunches

TheRainGame · 25/08/2024 10:46

Please inspire me!

I'm looking for things that can be made in big batches over the weekend and then easily dished out into lunch boxes during the week.

So far I've got pasta salad and soup...

Carrot flapjacks https://www.myfussyeater.com/savoury-carrot-flapjacks/ These freeze well, but you’ll probably have to omit the nuts if the lunchboxes are going into a school with a nut free policy.

Sausage rolls - https://realfood.tesco.com/recipes/secret-veg-sausage-rolls.html I use this recipe, not because my dc are opposed to veggies, but with the addition of veggies they’re basically a balanced meal - carbs, protein and veg

Frittata https://www.bbc.co.uk/food/recipes/lunchboxchorizoo_07622 I often swap the chorizo for cooked chicken

You can freeze sandwiches
scones would be nice also and can be frozen ahead

Falafel, fritata, cheese scones, tuna pasta. If you have a food flask you can batch cook jacket potatoes, reheat in the microwave in the morning, top with beans and pop in food flask (or take potato plain and add little pot of tuna/cheese/coleslaw at lunch time.

Use bento boxes and buy double so you don't need to wait for the used one to dry.

Fried rice type thing
Frittata
We do an Egyptian style rice with onions and lentils.
Sandwiches can be made ahead and put in the freezer
Pesto pasta

Puy lentil, or mixed bean, or cous cous salad would keep for a couple of days in the fridge. You could add things like a portion of chicken or cubes of cheese for protein.

What does your Dc like to eat?

GalacticalFarce · 29/08/2024 08:48

Mini quiches
Sausage rolls
Other filled pastries like baked samosas or spinach/feta type things
So many soup varieties. You can even put pasta, rice and broken up noodles into them to make filling meals. My dc loved them.

Mine like couscous salad. I make up a big bowl with grated carrot and courgette in, keep it in fridge then add different things like cheese or chicken throughout the week once they are in separate portions.
