Made in our little smoothie bullet blender 🥰. I'd made the caramel syrup and the caramel sauce myself.
I can't believe how easy it was, blended a couple of handfuls of ice, some milk and some espresso and the caramel syrup along with about a tbsp of cornflour mixed with water to thicken it. I've been experimenting with how to thicken it and didn't want to use xanthan gum as I try to minimise UPFS and an unearthed a recipe that recommended cornflour. I did blend it for quite a long time to get the ice nice and small. I do have one of those ISI foamers they use in coffee shops but you could easily use squirty cream.
i saved the cup the last time Dd and I went to Costa and I just wash it out.
yes I know they aren't proper coffee (I drink plenty of that as we have a lovely machine) but I do love one occasionally. Cost pennies compared to what I'd have paid at Starbucks or similar.
