Extremely difficult to buy. is this due to allergies? I would recommend visiting a local butcher - they might be able to source, even if they don't actually have any themselves.

These ones do have some monosulphites but they are the ones DD can eat without any reaction and they don't have nitrates.

Apparently the "naked" range in Waitrose of bacon and sausages is very good and no nitrates

Most fresh British-style sausages don't have nitrates, although that doesn't help you if you're looking for no additives at all. It's the continental cured sausages that have nitrates and it's usually quite obvious from the colour and flavour.

Look for a good butcher that makes their own sausages, you can ask them what goes into them before buying.

I don't think the Duchy brand ones contain nitrates etc.
