Prep ahead lunch for work colleagues

I'm hosting a working lunch at mine in a few weeks. Will be four people from my team. I need some inspiration on what to serve! Ideally it will be something that I can prep ahead and whack in the oven when we want it. One team member doesn't like food that is too spicy but beyond that, and another has a nut allergy

Welcome all any any ideas!

The rukmini iyer crab tarts are really good. And simple, you could prep the topping in advance and then just bang in the over when they got there. Would be nice with some roasted potatoes and a salad again you could do this in advance and then prep at last min xx

A puff pastry tart could work. Ready rolled sheet of puff, top with garlic roasted Mediterranean veg (roast the night before) and Parmesan. Serve with a couple of salads and French stick.

I'd do meats, cheeses, quiche, baguettes, olives, crisps, salad and some fruit yoghurt and honey

I had a similar situation a while ago. I did a beef thai noodle salad and it went down really well and I was able to do it all in advance.

Beef casserole and jacket potatoes.

The beef casserole should bubble away in the oven for about 2,5 hours.
