Do you make sauerkraut or kimchi?

I've made sauerkraut a few times, mostly successfully. I intend to start another batch tonight.

I have some bought kimchi which is delicious, but too spicy for me. Can I mix it with the fresh cabbage when I make the sauerkraut?

You can mix anything with your cabbage, in the way of seasoning.

I’d be more inclined to keep the kimchi separate and just add a little to the saurkraut when I eat it.

It’s generally eaten in quite small quantities I believe. Often added to foods during cooking or just before serving. It’s not like coleslaw.

I love kimchi and have made my own rather than bought from the shop.

My threshold for chilli heat is quite high though, so I do eat it like coleslaw sometimes.

If you can eat Indian pickles, then treat kimschi a bit like that I suppose. Mix it with fried or scrambled egg with toast, or have it with fried rice.
To cool the heat, you could maybe have dome yoghurt or cottage cheese with it.
