Hi all, I'm looking for ideas for meals that are super easy but you look forward to eating when you get home from work. Can be things that have been batch cooked and frozen, put in the slow cooker, or are just very quick and easy to make fresh. DH doesn't eat fish or seafood, veggie is fine.

I've already got:

Lasange
Curry
Chilli
Spag Bol
Sausage pasta bake
Chicken schnitzel
Cottage pie

Nuggets/fish fingers/ scampi in wrap with salad

Enchiladas
Fajitas

Sausage casserole

Hi there what about chicken stir fry using the stir fry vegetables mix from the fridge in supermarket and buy some chicken fillets and add a simple stir fry sauce that you like. It taste delicious the next day so if you cooked today for tomorrow that would work .
vegetable lasagna tastes amazing using courgette, egg plant , carrots , beef tomatoes , onion red and white and mushrooms make it exactly the same as you would the meat version except each layer is mixed veg i. Tastes best when you slice and roast vegetables first then once cooked start the lasagna add the sauce on top of vegetables then lasanya sheet white sauce repeat

Ratatouille - especially at this time of year.

Have it as a main dish (with nice bread) or served as a side? Had it tonight, with a porter steak. Delicious.
Tomorrow I’m using the leftovers with some fish.

Quiche, crustless quiche, frittata, or tortilla (I think it's called Spanish Omelet in English - like a frittata with potatos)? Maybe labour intensive up front but they all refrigerate and freeze well and can be served hot or cold.

I also like to have soup on hand - chilled soup, in summer, like gazpacho or borscht or spiced carrot or cucumber-yoghurt-dill-mint - to go with sandwiches, wraps, quesadillas, etc. and make a change from salad. Either made from scratch at the weekend or bought in cartons.
