I need some new recipes - Google wasn't much help.

I usually braise in butter - sometimes with onions - & either cumin or caraway seeds.

Your ideas, please ?

Have you tried it roasted or grilled?

This is really good although I usually cook it for longer, about 20 to 25 minutes.

I sliced it into wedges, drizzled over chilli oil, salt and pepper then roasted covered for 30 minutes, uncovered for 10 until nicely charred. It was for a sandwich recipe and although the chilli oil was accidental (ran out of olive oil), I've used chilli oil ever since.

It's delicious by the way. A bit messy to eat so I'm not brave enough to take it to work but I eat it on WFH days. It makes a lot more than 2 servings though. It could easily make 4 sandwiches but I try to squeeze it into 3 days. Partly because I get nervous about keeping food for too long and partly because I don't want the same sandwich for a whole week.

The herby bean and artichoke sandwich on that website is also good. Sounds a bit mad with the mint, basil and lime but somehow it works.

I only tried them because I read about aiming for 30 plants points and was trying to vary the veg I was eating.
