I have ten eggs that are theoretically past their best before date but I have tested and are fine - what should I cook/ with them?

I should say that I have a teen and tween who are going to be at home for the week so anything that I can fashion into something snack-shaped will be a double win!

All in one school cake. Weigh 4 eggs in their shells then use the same weight of flour, butter & sugar. Give everything a good mix with a splash of vanilla and bake, cover in white water icing and sprinkles. Delicious.

If your teens like ramen, a soft boiled egg on top is always a winner.

Crustless muffins. Basically frittata in a muffin tin, chuck in anything you have with the eggs, some cheese. Mine like chorizo and peas in them. Good for snacks.

Thank you for the excellent ideas. I have done a batch of peanut cookies (the teen is starting to be very interested in protein...) and will do muffins next. Ramen is also a brilliant idea!

Eggs are fine ages beyond their best before date. As fresh as possible is ideal for, say, poached eggs but cake is very forgiving.

I’ve made this Nigella Lawson lemon polenta cake a couple of times recently and really like it. It lasts well too (if you show restraint, which I generally don’t). www.nigella.com/recipes/lemon-polenta-cake
