Carrots rapees

Does anyone have a great recipe for this? I've tried a few but not they are quite hitting that zingy sharpness of French supermarket carrots rapees and need my fix as we aren't going abroad this year!

Lemon juice and mustard, adjust to tase. Also needs seasoning, olive oil and parsley.

I can't give quantities as I'm more of a chick it and taste it cook, but it definitely needs the lemon. More than you think.

Thanks both - I think I've perhaps been a bit cautious with the mustard. I'll try adding some lemon juice in too.

I'd never heard of this before, but read this thread, made some and liked it...but loved it the next day with a dash of vinegar and some pine nuts added. Thanks!

I do carrot, lemon juice and raisins. Can chuck in some pine nuts or chopped / flaked almonds when serving so they stay crunchy
