Chicken recipe/idea to prepare in advance to takeaway and easy to serve!

4 of us are off for a long weekend this coming Friday.

My friend is preparing a chilli to have with rice when we get there, I need to to prepare something with chicken for the next evening.

I want it on a similar theme, ie; made before we go, easy to serve when there.

Thinking of something like chicken, bacon, mushrooms in a carbonara sauce and to serve with pasta.

Anyone have any brilliant ideas please?

Thanks

No brilliant ideas, but...
fajitas
curry
pie
tex mex thing - chicken wings/drumsticks, potato wedges

or the pasta thing sounds nice

chicken paprika (like a goulash but with chicken)

chicken peices roasted in sticky bbq sauce, would be easy to transport and easy to heat up and serve with salad and bread, or potatoes

I make a very tasty chicken pie make like a fish pie, so with mash instead of pastry, the mash has other veg in it as well, you could do that with chicken, bacon and mushrooms, lots of cheese in the mash, nice comfort food

i make chicken and broccoli pasta - cook breast in bits, add to cheesey sauce with broc and pasta. then bake for 35 mins at gas mark 6 (180?). i do use left over roast chicken and use real chicken stock for suace then add single cream sometimes. can add spinach too. can be as fancy as you want. delic with garlic bread.

I make a Spanish chicken dish or a Moroccan chicken dish when I want to take something camping.

The moroccan chicken is served with cous cous which is really easy to do and the spanish chicken I either serve with potatoes or with rice.

I have a great recipe with chicken and pasta mixed into a tomato sauce, then you stir pesto into cheese sauce and pour in over the top. It freezes fantastically and is in one dish. Just needs a salad or something. Let me know if you want the recipe and I'll type in out for you. I also have a divine one for chicken breasts in a tomato/coconut milk sauce which you stick in the oven to reheat, but you would need your potatoes/noodles/whatever, as well.

What cooking facilities will you have when you get there? ie could you prep something to wack in the oven, or does it have to be a heat on the hob type thing?

These are great thanks!

utterlyconfused - I would love the recipe you describe, it you could type it out that would be great.

lilolilmanchester - full(ish) kitchen. oven, microwave, fridge (no freezer but prob the fridge has a small compartment for frozen stuff)
