got some diced chicken out fridge - use by tomorrow and tipped it in frying pan and thought it smelled a little sour as it was cooking smell lot stronger and cooking in saute pan with lid on. Now cooked it smells more normal but would you risk this , is sour smell a sign of being off ? I know sometimes vacuum meat can have a little odour but this got stronger before snelling more normal , smell was sour almost vinegary smell ?

Absolutely not. With chicken it's not worth the risk
