Can eat this dark red soup?

I usually grate and chop my own veggies for lentil soup but I picked up a bag of soup mix yesterday and have added it to my cooked lentils. I added stock and left it to simmer. It's gone a dark red colour. Never had this before. It's usually a light orangey colour. I've googled it but not really managed to find and answer.

Has this ever happened to anyone and is this soup safe to eat or should I chuck it out?

Can eat this dark red soup?

I’d eat it, I’m sure it’s fine. Have you tried a small amount and does it smell ok?

Yeah it tastes fine and doesn't smell off or anything. Just bizarre that it's turned that colour.

What was in the soup mix? Red cabbage? Beetroot?

Did you put the lid on the pot when I put the lid on lentil soup it goes darker.

And presumably you're sure it didn't overcook at the bottom of the pan?

Onion, carrot, turnip and parsley in the soup mix.

I haven't burnt it. I've don't that before but the soup didn't change colour, I just ended up with black bits from the bottom through the soup. 🤢

I'm blaming the soup mix. That's the only thing I did different from usual. That's what I get for being lazy and not just grating a few carrots haha!

It could be the parsley. Usually you’d add it right at the end so it stays vibrant. If it’s been added with the soup mix it will go dark and dingy.

How weird! It looks like meat! I honestly can't see how the soup mix made it that colour. Could it be that there wasn't enough water? If it's not burnt then you know nothing bad went into it, so it has to be fine to eat.
