And you're serving it to guests, would you just do a green salad?

Can't find a link for this recipe. It sounds amazing though. It's Gizzi Erskine and it's a risotto cake with a roasted ratatouille filling. Plenty of taleggio in it too.

What are your thoughts?

And any starter ideas? (Vegetarian 😀)

It would imply to me that this is a rich dish which wants a simple, clean-tasting accompaniment. It sounds amazing, but possibly quite soft, so would also benefit from the nice contrast with crisp salad.

How about an endive salad? Endive sliced across in 1cm thickness, orange peeled and chopped across the segments to release the juices, toss with olive oil, lemon juice, a pinch of salt and plenty of dill.

If a recipe said serve with anything, I always ignore and serve it with whatever I want to.

That sounds quite rich so yes, I'd probably serve with a salad to give something fresh alongside it.
