Best simple pancake recipe

Looking for an easy simple pancake recipe. My kids love them and I would like to start making them for breakfast at the wkends.

Jamie's Oliver's one cup recipe.

1 cup of milk, 1 cup of flour and 1 egg.

Use the same cup for both.

I add a splash of vanilla/chocolate chips/blueberries, etc... whatever the kids fancy on the day - simple!

My son has pancakes every single morning 🤦🏻‍♀️. 1 egg, 50g plain flour, 150ml milk. Makes 3 pancakes. These are the crepe pancakes, not American fluffy ones.

I do banana pancakes for my DD. Half a mashed banana, one egg, two tablespoons of self raising flour (or plain flour and half a teaspoon of baking soda) mix it all up in a bowl and then spoon it into a frying pan. I do about a tablespoon and a half for each pancake. Drizzle with honey or yoghurt on the side for dipping

Should mention this makes approx 4 pancakes - double the ingredients if you need more.

Crepe type pancakes are 1 egg to 2 oz flour to 1/4 pint milk, plus a little bit of sugar. That does enough for one hungry person and scale up as required.

Butter the frying pan and make sure it's good and hot before you start.

For a healthier version, my favourite thing in the world to feed kids for breakfast is banana oat pancakes:

per person:

1 banana
small cup oats
1 egg

blend in a nutribullet or food processor until smooth-ish (a stick blender works too), and dollop blobs into hot frying pan. These are quite thick and can go dense, just cook for a minute or so on each side. YUM. I serve with yoghurt, berries and honey.
