Can I just chuck all this veg into a soup or would it be weird

Potatos
Carrots

Would it taste weird? I need to use them up

no, it would be lovely, my favourite soup at the moment is Leek, carrot, potato & onion so you are just adding brocolli & parsnips. mmmm

A good tip is to roast the leek, carrot, onion and parsnip first in the oven for about 35-40 minutes. It gives it a more intense flavour.

I often use stock from the chicken we've roasted for Sunday lunch.

I would dice the onions, parsnips and carrots
Cookfor a while in some oil

Add chicken stock and cook for a bit

chope the rest (other than potato - I think potato makes soup rather yucky) and shove in

Lob in a tin of mixed beans and/or chick peas and tin of tomatoes

Also if you fancy some bacon or chorizo chopped small and cooked first

Then reduce until thickish
is divine

You should have celery too at the beginning for flavour
