Does it sound nice? What shall I serve it with? TIA!

I make a version of this but without the curry powder, and if I'm only doing the carrots I add a sprinkle of cinnamon too.

They are absolutely delish, usually I serve them with any kind of roast poultry or meat, sometimes with sausages and mash, with steak, or just with other roast vegetables for a nice filling meal.

DS always eat them too.

Sounds nice!
I usually use maple syrup on roasted carrots and parsnips - works really well.
