I make a mayo and lime dressing I put at the bottom, then layer with whatever salad stuff I've got in the fridge. So peppers, cherry tomatoes, sweetcorn, feta/grated cheese, chickpeas, grated carrot, beetroot etc then chopped lettuce at the top and maybe croutons. Give it a good shake a few mins before you want to eat it and again just before so the dressing is on everything. Can't stand a dry salad!
