casserole the chicken with the leeks and potatos, with stock and seasoning, and have cauliflower & broccoli cheese on the side?

I would add some sage,maybe a splash of white wine, make some white sauce, and make a chicken pie with mash on the top instead of pastry. Yum.

I've done the one-pot thing, and it's in the oven on 200C

how long will the potato take to soften up then?

you shouldnt'have put the brocc and cauli in, they will be mush by the time the chicken has cooked

Oh well, I like it mushy anyway, and the boys might actually eat some greenery prefer their vegetables a little softer.

It was LOVELY.

I floured and fried the chicken first and sat it on top of the veg and stock etc, and I've turned the leftovers into soup!
