Me and DH have decided we want to follow a more vegetarian diet. I'd never say we were vegetarian as I don't want to give up all meat etc but I want to switch my diet maybe 80/20.

Looking for any fantastic tried and tested recipes - we love most foods but when it comes to veggie meals I am rather fond of aubergine, beans etc and I prefer not to use meat substitutes (ie if making a chilli I'll make the burnt aubergine one rather than use Quorn mince).

Miso braised aubergine
Broken pasta with broad beans and rocket and/or Miso buttered greens pasta (I often do a bastardised combo of these two)
Perfect bean chilli
5 a day toad in the hole

I would recommend looking up Meera Sodha, her second and third books were 100% veggie, she write the vegan column for the Guardian and I get on really well with her stuff.

Joe Woodhouse, Your Daily Veg and its sequel More Daily Veg
Anna Jones, One Pot, Pan Planet and she has a new cookbook out called Easy Wins that looks great too
I've been given the Green Roasting Tin book by Rukhmini Ayer but haven't tried anything yet - all looks fab though!

Mediterranean tray bake... tomatoes, peppers, courgettes, red onion, tenderstem broccoli, halloumi chunks, garlic, salt, pepper, bake for 35 min @ 180 fan. Eat with chunks of those bake at home baguettes.

Cheats Enchiladas ... tin of taco beans, tin of tomatoes, seasoning powder, warm through, roll inside some wraps, top with cheese and bake.

I have one veggie daughter and it is nice to have a few quick meal ideas of things we all like to eat together, for when she drops in at teatime.

As you like aubergines, try Pasta Norma, also you might like Pasta Primavera which is a lovely way to use spring and summer green vegetables.

Frying pan lasagne!

Put some lasagne sheets on to boil.
Chop up a couple of courgettes into chunks and start to fry off.
Drain the lasagne sheets.
Make a basic ragu sauce however you fancy, add in extra veg if you want.
Add the ragu sauce to the now cooked courgettes in the frying pan.
Stir in the lasagne sheets.
Put chopped up mozzarella on top.
Put the whole frying pan under the grill.

Eat!
