Veggie lasagne - no peppers!

Looming for recommendations for a crowd pleasing veggie lasagne please. Must not contain peppers (I adore them but friend who is coming for supper thinks they're the work of the devil)!

Is using Quorn out of the question? I make mine with that, along with some soffrito mix and the M&S everything tomato sauce - it is gorgeous and a real crowd pleaser

I made this Jamie one recently (although used tenderstem broccoli instead of asparagus for preference) - I made it as a tidy normal lasagne rather than a scruffy one. Delicious.

Spinach and ricotta lasagne is delicious.
Or just make a standard veggie lasagne without peppers. I would use courgette, aubergine, tinned tomatoes. Add puy lentils for a bit of extra interest/protein.

I roast piles of vegetabes and tomatoes - usually squash, aubergine, onion and some garlic. Meanwhile I make a basic tomato sauce - chopped onion, bit of garlic, tinned tomato/passata, oregano, basil,bit of water etc. Then mix my roasted veg with the sauce (I find it needs the sauce).

The do a normal bechamel sauce and layer as usual. Sometimes I add some ricotta or chopped spinach.

I just make my lasagne with dehydrated soya mince instead of normal mince. Onions, mushroo.s, celery, tomatoes, finely chopped carrots, lots of garlic.

Just a thought, but is it ALL peppers ?

Red are a very different flavour to underripe green.

We love this one and we're not vegetarian. Replace the peppers with courgette (we add them anyway) and roast at the same time as the aubergines. We also sometimes add mushrooms.
