Stewing steak summer

I’d quite like to empty my freezer. There’s quite a bit of diced beef and stewing steak. Does anyone have any more summery recipes than stew cos it’s not really stew weather!

something like this could work well, if you slice it really nice and thin then you can get away with cuts you typically have to cook for ages to soften up.

I'd go towards Vietnamese / Thai flavours and serve with rice or an Asian style slaw / salad. Seems a bit lighter.

Cook with chopped tomatoes, onions and garlic, serve with tagliatelle or spaghetti.

Burgers or Asian might work. Fussy palates are a bit of a problem, but you can’t please all of the people all of the time 🤷‍♀️

Stew it with some spices or BBQ sauce and then shred it up into 'pulled beef' in burger buns, with pot salad, coleslaw etc.

The pulled beef and similar things sound great.
And the Vietnamese flavours are a fab idea.

I adore making slow cooked chilli out of beef steak. I often serve it in summer, outdoors. With a big fresh salad and some rice, cheese, onions and sour cream and coriander to add at the table. You could use tortillas as well, or make guacamole.

I like spicy food on a summer late evening.
Usually after a day of drinking white wine in the sun. (I add ice cubes to my wine in summer, I think that's meant to be uncouth?) Haha.

I made chilli con carne this week, using frozen diced beef instead of my usual mince. It was excellent. Quite summery when served with salad, grated cheese, wraps.

There's an excellent bbc good food recipe by Sara Buenfield that involves sun dried tomatoes. I did that, I think using 500g bag diced beef instead of 1kg mince (makes about 10 portions).

great ideas thanks. Every time I see it I just think stew and mash. I am going to find some recipes. Even if the kids eat something different for once.

I make this regularly, I always cook and add the broccoli separately at the end. Sometimes have with noodles and a nice Asian slaw or some wok fried greens instead of rice.

I have discovered the joy of a flatbread/wrap/pita/taco shell etc with whatever meaty thing (sans heavyvsauces) and then lightly pickled veg to lift them. Also things like some version of salsa or herby green sauce.

I have some.short rib in the freezer myself and was thinking of cooking them to sort of pulled beef levels, then turning into a sandwich with some pickles, bit of lettuce, maybe some garlic sauce.

Although now I am thinking about it, Iwas going to do mince tacos next week with a corn salsa ans pickled red onions. Maybe I will do beef short rib tacos instead.....

Right, today I’m going to start some kind of pulled beef next week chilli or stifado - couldn’t get shallots or baby onions this morning.
