How to change the diet?

Just read the thread about UPF. I am aware of the little to no nutritional value in UPF and would like to revert to my original diet (Central European).

Just realised I literally lost my ability to cook. I definitely still can do it but it’s like „meh”.
2 kids, one ASD and thanks to the views of their DF(which I have split from) are kept mainly on beige food.
ASD DC has bowel problem which I believe diet is a contributor to.

NT DC (13)will eat all fruit and carrots. No other veg. Massive meat eater. Currently (for the last 2 years) in a growth spurt.
ASD DC (11,severe ASD) will not eat any veg, will eat raspberries,strawberries and banana at school snacktime(only if there’s nothing else). Will not eat „wet food”. Dry pasta is common dinner theme.

They want to fill themselves with crap. And so do I. I want to change it.

I can bake bread. Rye, wheat,sourdough,you name it.

Where to start and how? Any suggestions welcome.
