Vegetarians! Would you be happy with this substitution?

Hi folks

Got some people coming around for dinner on Thursday night.

We’re planning on doing a leg of lamb with red onions, peppers & tinned tomatoes with some redcurrant jelly, mint sauce, thyme & oregano - cook it low and slow for ages and serve with roast potatoes and tenderstem broccoli or green beans - minimal prep but a bit special.

Just added a new person and she’s veggie so was trying to think what we could do for her that is similar (I would hate to do something completely different) and goes with the sides.

So if you were coming to dinner and were served baked feta with onions, peppers, tomatoes and herbs as your main, with roast potatoes and broccoli would you be happy or think it was weird?

Sorry OP, lovely idea but I think feta is hit or miss. I say that as a vegetarian who really dislikes anything goat/sheep milk related. But if your guest likes it then it sounds great alongside couscous & flatbreads

Chelsea26 · 17/07/2024 16:27

Tsorry for delay - phone died and I had to wait for my man slave, I mean DP, to get my charger.

So new plan
Lamb Stew/casserole/slop as above
Veg Casserole with onions, peppers, tomatoes etc
Baked Feta with chilli and honey
Greek potatoes
Grilled Halloumi

Cous Cous with med veg and harissa
Posh Tzatziki (bought from Sainsbury’s)
Flatbreads

Kind of a big spread and Veggie can eat all but one.

I can prep/cook the top four and roast the (frozen) veg for the cous cous during the day at my leisure and the man slave can do the last few bits when he gets in from work.

Thoughts?

That would be plenty for this vegetarian, and I would be very appreciative.. All sounds delicious. Lol at man slave.

InTheRainOnATrain · 17/07/2024 16:30

Sounds amazing.

Lentilweaver · 17/07/2024 16:31

I love baked feta with chilli. Why do I never make it? Putting it on the shopping list.

SwankyPants · 17/07/2024 16:33

Quorn roast?

Lentilweaver · 17/07/2024 16:34

Personally, I really hate quorn and all other fake meat. I prefer any kind of vegetable. Or even just good bread, cheese and salad.

LibertyDuck · 17/07/2024 16:35

Not vegetarian, but I wouldn't eat lamb so you may need to offer the alternative to some of the other guests too!

thunderandtroughs · 17/07/2024 16:36

I would use the same ingredients for the lamb sauce, but hasselback a block of halloumi, and cook it in the sauce.

Sounds delicious! She'll be happy you've thought of her and most likely won't want you going out of your way. This sounds lovely.

Chelsea26 · 17/07/2024 16:47

Thanks everyone

@LibertyDuck Ob yes there will be plenty of everything for everyone- no one leaves my table hungry!!

@thunderandtroughs That’s kind of the plan, without the hassle back halloumi. The veg sauce will be similar to the lamb sauce (probably without the mint sauce)

No I wouldn't be particularly happy with a plate full of vegetables. Can't stand feta either.

A veggie not wanting vegetables 😄

Andthereitis · 17/07/2024 16:52

I think the best solution is to feed me the lamb and then all have chickpea stew.

Everything you have suggested is fine. Make whatever is easiest for you to do.

My thoughts?

"Can I come?"

Sounds fab!

I'm not especially fussy, if I get served enough protein I'm happy! But I'd be super happy with what you're proposing. Especially the 2 types of cheese and the fact there's a veggie version of stew too. What a thoughtful friend you are.

If you're a vegetarian what else would you expect?

The substitution sounds delicious @Chelsea26 (although obviously, don't give a vegetarian vegetables cooked with the lamb).

We're all different. Just because you don't , doesn't make it an unacceptable alternative.
It was a suggestion for the OP.

Chelsea26 · 17/07/2024 17:20

Thanks @OuterSpaceCadet & @YellowAsteroid

Yes everything will be kept separate. Usually this wouldn’t phase me at all but the ankle complicates things…

But I can definitely sit at the island with my leg up and chop onions, peppers and potatoes into separate dishes as needs be. I’ll get DP to get all the dishes, tins, herbs and spices out before he leaves so it’s all reachable and my sister is popping over at lunchtime so she can help if I’ve forgotten something or can’t manage something.

I’m looking forward to it now!

Honestly, if you have a broken ankle, you needn't provide all that.. Nobody will expect it.

SallyWD · 17/07/2024 17:23

I'm vegetarian and I would love it!

myladybelle · 17/07/2024 17:29

100% yes to roasted feta. Sounds delicious.

YellowAsteroid · 17/07/2024 17:29

Chelsea26 · 17/07/2024 15:26

I feel perhaps it’s the roast potatoes throwing it off.

We could have the lamb (and the feta/halloumi/chickpea whatever) With flatbreads and couscous and salad maybe

Does that bring it together more?

I am fully mobile and happy to skivvy for you (I enjoy chopping vegetables) if I may join you for supper!

I do a leg of lamb at about 100 degrees for about 10 hours, and it just falls off the bone. Slosh red wine in the baking tin, plus fresh rosemary & half a head of garlic, just in the wine, cover the whole thing with tin foil, so the meat steams as well as roasts. It is delicious and dead dead easy!

All round to @Chelsea26 for supper!

Chelsea26 · 17/07/2024 17:32

@Lentilweaver I know, thank you though. They would completely understand if they got given takeaway or whatever but…

it’s been a long time coming, it’s a special occasion and it can’t be postponed as they live on the other side of the world and who knows when they’ll be back so I really wanted to try and make it special.

Obviously it would be better is DP didn’t have to work all this evening and all day tomorrow so I could just hand the reins to him but that can’t be helped either.

I think, with all your help, I have a special but manageable plan now which I’m really happy about ☺️

Are you taking applications for new friends? I’m not a veggie but that all sounds amazing! Hope your ankle heals soon!
