Is there anything simple i can do with carrots, potatos, onion, mushroom and aubergine?

Also have spring greens (i think thats right).
Had them in veg box and need to use them up.
Never tasted aubergine.

Is there anything i can do with them that is really easy? (step by step instructions pleae!) Don't have much else in the house. Only needs to feed me.

Roasted vegetables?

Chop into bitesize pieces. Take a roasting pan and add olive oil. On a high heat, stir fry your veggies for a couple of minutes until they are well coated with oil. The pop the whole lot into a hot(220C) oven for 45 minutes.

If you have garlic and rosemary or thyme, then use that too.

Aubergine needs to be salted first - slice it and sprinkle salt onto each slice. Wait 20 minutes and rinse away the moisture that comes out.

It can be rubbery if you don't do this.

Boil them up, and stir them into your roast veg when it is done?

Was going to suggest roasting too. With couscous and maybe some feta if you have it? Yum.

I never bother to salt aubergine.

No cous cous left. Never tried feta. I am trying to try new things.

Veg is in the oven.
