Freezable nutritious meals

Hi all,

I need to meal prep and freeze some meals to eat once I've had surgery next month.

I am only cooking for me, DH will cook for the DC.

Recipes need to be low fat, v nutritious and full of fibre esp soluble fibre to avoid both constipation and weight gain while I'm off my feet.

Does anyone have a favourite recipe?

My go to is tuna and chickpea curry made with tinned Tom's/chickpeas, tinned tuna, frozen spinach, red onion and curry powder.

I'm not a fan of soup, I find the veg has to be watered down to make it.gulpable, it's only one step on from baby mush. And it generally needs bread which I want to stay away from while I am recovering so I don't gain weight.

But Dahl might be perfect, I will search out a good recipe.

Chilli - you can add lentils if you want to up the fibre. I use a can of mixed beans rather than kidney beans, and add peppers to up the veg count.

I must sound so lazy but amongst all the other thing I need to plan for during the operation I was having a total brain freeze.
