How do you make Thai curry saucier? Without losing flavour?
im using a paste and coconut milk but just don’t know how to get it to have more sauce without it being watered down!

pls send help 😅

How much sauce do you need? Just cook double, double the paste and 2 tins rather than one. I make my own paste as I find the shop bought ones are a bit one dimensional or bland.

You just make more sauce, like the PP said, more coconut milk and curry paste (or less ‘stuff’ in it). If the actual quantity of sauce is fine, but you want it thicker, add a bit of coconut cream (I can find it in tins at Waitrose) and a bit extra seasoning.
