Help - missed an egg out of recipe

Just put DC's birthday cake in the oven and realised I've only put 7 eggs in not 8. I did think the mixture was a little stiff, but I decided to trust the process.

How much of a disaster will this be.

The other ingredients we 400g sugar/flour/butter.

Do I need to go out and get more eggs to make another?

O% disaster. It won't make a difference.

Eminybob · 11/07/2024 19:31

Oh, amazing news, thank you

What kind of cake was it? Standard madeira or chocolate will be fine.

JC03745 · 11/07/2024 19:32

😂What type of cake is this that needs 8 eggs? I'm sure it will be fine OP.

Ineffable23 · 11/07/2024 19:33

On that many eggs I think it will be fine. It's a 12% difference and I reckon that eggs vary that much in side anyway. I always ignore the instructions about which size of egg anyway.

HateMyRubbishBoss · 11/07/2024 19:34

I always put less eggs than the recipe, always on cakes and brownies !

your cake might taste better this way x

A big one!

It's a 35x25 rectangular cake. I want to get a good rise on it as I want to slice and sandwich it.

But 400g of other ingredients isn't that big - a cake with 400g of other ingredients would usually be more like 4 eggs. I always do my eggs by weight, so weigh the eggs & use the same weight of flour etc. so if 4 eggs weighed eg 420g, that's how much butter, flour etc I would use. An egg usually weighs about 50g or a bit more.
So to me 8 eggs would be way too much for 400g flour.

Isn't it 1200g of of other ingredients though?

It's not 4oz each of butter, sugar and flour making 12oz (i.e. a 2 egg sponge), it's 12oz each (so to my mind a 6 egg sponge, but presumably this is a slightly different recipe).

Edited: realise my ounce calculations in my head are a bit wonky. 133g would be 5oz and 400g would be about 14oz so actually a 7 egg sponge.

Same here - I always weigh the eggs first then use that same amount for the dry ingredients each. Never fails me!

It's 400g each of the other ingredients. The batter was very thick, I would have been a dough with 4 eggs.

I usually make a Victoria sponge with 200g each flour/butter/sugar and 4 eggs and it turns out perfectly.

Oh, yes I can't do my sums!
200g = 4 eggs
400g = 8 eggs
It'll be fine!

Olika · 11/07/2024 20:20

At least you only missed one, last time my mum forgot all eggs.

gleefulstar · 11/07/2024 20:30

Is it out of the oven yet OP?

Hope it turned out ok!

Eminybob · 11/07/2024 20:34

Yes just out. Looks fine, thank you.
I guess the proof will be in the eating. Luckily just a bunch of 10 year olds eating it and it'll be covered in icing so I'm sure I won't get any complaints

Excellent!!

(Quite proud of myself for not putting eggscellent 😂)
