What do you have for lunch and dinner? You don't need to be making special meals for a 1 year old. Just give her what you have.

If you want her to eat lunch, the best way is to model it yourself, and both sit down together.

Soup
Sandwich
Omlette
beans/scrambled eggs on toast
Yesterday's dinner leftovers

For dinner - whatever anyone else is having.

If you don’t eat lunch then she will probably copy this pattern. You should model what you want her to do. If you’re not eating then give her what you would have had if you were eating

I used to make these in large batches because they can be frozen

Sweetcorn muffins https://www.tamingtwins.com/savoury-muffins-recipe/

Quesadillas cut into are an easy one. Lots of filling options - cheese, black beans, sweet potato, tinned fish. Savoury pancakes and muffins. Crudités and hummus.
