Out of inspiration.. what to make for dinner tonight?

Cheese on toast, with red onions, thinly sliced tomatoes, some basil, and a spread of relish (onion ideally) side portion of home made chips...mmmm

2nite we are having casserole, I made it yesterday with left over vegetables, split DH/DDs and added sausages to theirs, some mixed pulses in mine, thick crusty bread with it. Yum.
Tomorrow - creamy salmon tagliatelle and salad
Sunday - will try to blag an invite to tea somewhere!

ooh I made a lovely thing last weekend and so easy

Get a roll of ready rolled fresh puff pastry

Mix some soft goats cheese (about 150g) and a few tablespoons of thyme and spread mixture over pastry
Top with sliced tomatoes (overlapping) a drizzle of olive oil and some thyme sprigs

Bake 50 mins at about 190

Let it cool a bit before eating

Its Friday, fish and chips!!!!!
Then follow my recipe, get DH and DC to go and see MIL for 2 days whilst I'm at work. Et voila! No cooking.

Oh I like that - that means Lulu can have what she likes to eat, no low carbs for her if DH is not around...you can have ben and jerrys for Sunday lunch Lulu!

There was a great curry recipe in the paper the other day
quick prawn and almond korma
1tbsp sunflower oil
1 onion chopped
400g prawns
2tbsp korma curry paste
3tbsp ground almonds
handful of chopped coriander

heat oil
fry onion for 5 mins
add prawns and stir quickly until evenly pink
stir in curry paste, add 15oml water and almonds
bring to boil, simmer for 2-3 mins until sauce slightly thickened
scatter with coriander and serve with rice (or not in the case of your husband)

It serves 4 - I haven't tried this one but I tried a similar one with cauliflower and frozen peas but it involves putting lentils and rice in with the mix so I thought this one would be better and easier for you

Tonight we are having spatchcock [sp?] chicken.

Cut chicken down back, flatten, put in baking tray over a load of sliced potatoes, pour over pint of stock (just to cover potatoes really) bake in oven for an hour or so. Serve with green stuff

LOL solitaire - Dh is like that. He is going out tonight for a lads night and worried about me on my own to arranged for me to have a girly night with a fr4iend of mine, whos man is going out too. I am cancelling as I am looking forward to catching up on some trashy tv, eating that other magnum in the freezer and spawling out across our bed nice and early!!!

to be quite honest, low carb-- lasagna theres more meat and cheese and veg and only a small 2-3 slices of pasta per serving. makes a great meal and really isnt hard, or long to make. some really great recipes online too.

but then again i'm pregnant and craving lasagna.

oooh ! lovely ideas there ! have bought a happy chicken, some angus beef burgers, and loads of salad and veg, DH can have couscous. and i might well whip up a lasagne

the puff pastry thing sounds very nice, CD, although goats cheese is a bit too goaty sometimes, i find..

but i might do something with feta
