low UPF vegetarians, what does a days food look like for you?

Am currently reading How Not to Diet. Only halfway through but the evidence is certainly stacking up for going veggie with daily beans/legumes as main source of protein.
The vegetarians I know tend to eat ready meals all the time, which would not be for me. So those of you who consider yourself having a good vegetarian diet and mostly cook from scratch, what does a days food look like for you?
Any favourite recipes/meals? What about snacks?

Today I had pasta. With courgette, peas, broadbeans, creme fraiche, parmesan and lemon
With coleslaw I made - red cabbage, carrot, raddish and a Greek yogurt dressing - with dill, mustard and salt and pepper

I eat a lot of Japanese/Okinawa-inspired food. Probably not authentic because I’m not even one bit Japanese but it works for me - great variety, looks good, tons of fibre, small portions.

My typical dinner is some kind of leafy veg (cabbage), shiitake, fuzzy melon or similar, firm tofu and brown rice. I make most of the wok sauces from scratch

I had this yesterday for dinner. Rice is underneath the vegetables.
