Falastin and Jerusalem cookbooks- recommend a recipe

I just picked up Falastin and Jerusalem second hand. What should I make first?

I have both these books but haven't actually cooked much from them even though I love looking at them! That's mainly to do with the fact I have young children who aren't all that adventurous. I did cook the aubergine with tamarind which was nice and now I've got them out again I must cook some more. Will update when I do! Have you cooked anything from them yet?
