bought creme fraiche WITH HERBS by mistake-what can I do with it?

Use it to make a cheese sauce?

Serve a dollop on top of a baked potato, or on some soup

A friend of mine served this up as buffet food on top of mini baked new potatoes, it was DELICIOUS!

I do a fish dish where I put a layer of pre-cooked veg (eg finely chopped leek and carrot usually) from which I have reserved a little, a layer of crème fraiche and then lay fish fillets on top. Top with the reserved veg and bake in the oven for about 20 mins. I think it would be good with herby crème fraiche.

Pasta sauce - Heat creme fraiche, add chives and some cheese (blue cheese or goat's cheese go very well).

when you say put it in mini baked potatoes, I presume it's AFTER baked?

Fish pie and pasta sauce sound deeelicious.
