Best gooey blondie recipes anyone!? Help!?

DH loves blondies, my sister won't give me her amazing one (the cow!) it's his birthday this week and need an amazing recipe.

I must have tried a dozen. All turn out caky not gooey and dense with a crackled top like it's supposed to. I don't know what I'm doing wrong 😭. I'm a good baker most of the time. Am I cooking them too long? Is it my fan oven? Have I just not found the right recipe. I need one with room for mix-ins nuts, chocolate chunks etc.

You have reminded me that I tried a chai blondie the other day - it was amazing!

Slightly more chewey and cakey than dense though. No idea about recipes though.

however they are still more cakey than a brownie. The best brownies are made with a 3 phase thing - butter and chocolate in a bain Marie, sugar and eggs whipped to a mousse, and served flour and cocoa. Then you add the melted chocolate to the eggs, then fold in the flour and any inclusions. This is by far the best recipe I’ve ever made with a proper goey middle and a cracked papery top. I wonder if you could adapt it to make blondies? I'm often disappointed by blondies, even homemade ones underwhelm me, so not tried these recipes, but I have them bookmarked as they look so good.
