If you’re making mini soufflés I think you need them. Not expensive.

You could use a deep muffin tin, line it with greaseproof paper to make a collar.

You really do need ramekins to make mini soufflés! Go on, splash out on a set.
Do you have any Charlie Bigham pie dishes?
Or you could make one big souffle in a pudding bowl?

Strawberry.

They came out ok (all raised and fluffy) but I don't see what all the fuss is about! I'd rather have a nice meringue :)

I'm sure a cup or mug would have worked, had you not found ramekins. Anyway, ramekins are nice for individual puddings of all types, so they won't go to waste!
