Leek dish to go with roast chicken

Slightly inspired by the wonderful roast chicken thread...but definitely not TAAT!

Also in Aus, having a lovely wintry roast chicken tomorrow, and I'm looking for something a bit different to do with leeks. I normally do baked leeks with bay which are delicious but I thought thought there might be some great inspiration here! Ideally not too faffy, and we have a great stock store cupboard of ingredients. Hoping for some great suggestions!

And in deference to the other thread...there will be pigs in blankets (but only cause we're celebrating UK Father's Day), but there won't be Yorkies or roast pumpkin!

Leeks in cheese sauce - you can jazz the sauce up with wholegrain mustard if you like.

About to say leeks in cheese or cream and white wine sauce topped with Parmesan

I will say, cheese sauce makes everything better lol.
