I make this recipe on repeat and have it for my lunch at work most days (with a mini naan bread) when it's cooked, I chop up a bag of baby spinach leaves and bung it all in, it wilts in no time. This is really tasty and good for you! I usually double the ingredients, making a huge batch and then freeze in individual portions.

I use this recipe a lot...

Ingredients
1tbsp olive oil
2 onions diced
3 cloves garlic finely chopped
1 tbsp fresh ginger finely chopped
½ finely chopped red chilli (or ½ tsp of chilli flakes)
½ tsp cumin seed
½ tsp coriander seeds
2 tsp ground turmeric
1 tsp garam masala
200g dried red lentils
1 can chopped tomatoes
1 can coconut milk
500ml vegetable stock
salt & pepper
2 handfuls of fresh spinach (or frozen equivalent)

Cook the onions in the oil until soft
Add the chilli, garlic, ginger & spices and stir together
Add the stock, tomatoes, lentil and coconut milk and stir everything together.
Leave to simmer for 20 minutes, stirring every few minutes to make sure it doesn't stick

Frozen spinach - add for the last 4-5 minutes
Fresh spinach - stir through in the last minute of cooking and take off the heat once it's wilted.

This dhal is lovely, I add spinach at the end.
Do use about twice the quantity of spices though - lots of ginger.

Puy lentils cooked in stock with onions, celery and carrots and then added hot to a finely chopped salad. Cucumber, tomatoes, peppers, grilled peppers, anything you like really.
Add a bed of uncooked spinach trip hot lentils onto them to wilt. Mix together
Season, add olive oil, balsamic vinegar or pomegranate molasses and lemon juice.
Nice with fried bread croutons too.

Patak curry paste, 1 - 2 tablespoons
Sm can coconut milk
Can chopped tomatoes
Large jar chickpeas, jars are better than canned
1 onion, chopped
1- 2 Clove garlic, chopped
1 pack baby spinach, washed

Fry onion, add garlic. Stir in curry paste for a minute. Add coconut, then tomatoes, followed by chickpeas, low heat for 30 mins. Add spinach until wilted. Serve with rice. Even better the next day. Good standby.

Oh, my husband makes a lovely dish. Curried chicken rice.
Chicken marinated in yogurt & Tikka spices
Cook the rice with coriander seeds, bay & cinnamon. Add in chickpeas, cashews & chopped spinach and serve with a dollop of Greek yogurt. You can have it hot or cold. It's so good. Now I'm thinking of it. I'm going to request it for dinner tomorrow

We had this the other night - went down well! I air fried the paneer first and added a bit of garam masala, squeeze of lemon.
