Butternut Squash inspiration needed

I have few squash to use up. I have previously made soup and curry but fancy something a bit different. I am not the best cook, but like to try new things. Any tried and trusted favourites are welcome, thanks.

This goes down well with my family (except ds who calls butternut squash mums poison). I often have the leftovers for lunch the next day and tastes just as good. I've also done a vegetarian version with vegetable stock and mixed beans.

I have it fairly often as its a really cheap veg here.

I like to roast it and then eat it cold as in a salad with feta cheese.
Roast it with cinnamon for a side dish. Add some honey towards the end
Make creamy butternut, boil it then mash with butter and sugar and add in a bit of white sauce
Roast them in halves and stuff each side with fillings, preferably creamed spinach.

I second butternut squash risotto but roasted chunks are the main favourite in our house, especially with green salad and feta cheese as @isthismylifenow mentioned, or with pasta, or any meat leftovers.
It goes really well in a lunch box.

I like to add it to lamb tagine or when roasting chicken drumsticks.
I actually don’t like pumpkin much but butternut squash is the whole different issue.

I love butternut. Here are a few ways I use it (or have used it),

Butternut risotto. Always a win. By itself or topped with leftover chicken or cooked with pork mince, sage and chilli.

Added to mashed potato on a cottage pie or just any mashed potato.

Roasted butternut and baby spinach salad - roast in chunks with a bit of cinnamon and honey. Then toss while still warm into a big bowl with baby spinach. Add your preferred cheese and nuts - we like walnuts and blue cheese or roasted hazelnuts. Goats cheese and pine nuts is a good option too. Dressing of lemon/mustard/honey.

As a base for roasted veg served on hummus and flatbreads (I like to add tomatoes, aubergine, garlic and chilli to the roasting tray but you can do whatever you like).

Curries (but you already do that).

Boil or steam it then blend it with cream cheese, preferred flavourings and a bit of olive oil then add to pasta with some chopped cooked sausages.

Roasted as a side dish for a roast dinner.

Roasted in smallish chunks then used to make a butternut and feta quiche (haven't done this for a while - this is a great reminder, might do it soon).

Cut in half, remove seeds, then roast in tinfoil until soft then stuff it. I like it stuffed with cooked chopped onion and spinach and a bit of cream.

I love butternut squash. I like to roast in halves until very soft and then stuff the hollow with a (cooked) mixture made of mince meat, rice, peppers, onions, sultanas and top with grated cheese then grill until bubbling. It's not an elegant meal but it is good IMO.

I also love roasting diced butternut squash (olive oil, some chilli flakes) then putting it in a spinach salad, topped with crumbled blue cheese and a squitz of honey.

I love it roasted for far longer than seems sensible. It goes so sweet. Then I add chilli, smoked paprika, and blue cheese.

Cube it and roast tossed in olive oil
Do the same to a similar volume of aubergines

While those are roasting, thinly slice red onions and saute with garlic.

At lots of smoked paprika, cumin and cinnamon, salt & pepper. Add 1 or 2 tins tomatoes and 1 or 2 tins of black beans depending on how many mouths you need to feed. Simmer. Add in the roasted veggies.

Serve with rice and nacho chips.

I love to just roast it in cubes and then have it cold with mayo and chilli oil.

Peel. Cut into chunks and parboil. Drain
Make an Italian tomato sauce.
Slice the pumpkin and layer in a casserole like lasagne with the sauce. Cheese and breadcrumbs over the top.
Bake until bubbling and golden.

Filling, forgiving and keeps well.

Cut in half and bake until soft, scoop out flesh and mix with sundried tomatoes, cubed feta and oregano, replace in shells and put back in oven for 10 minutes

Inspired by all the suggestions, I tried this today as I had some left over roasted chunks. I stuffed the pasta with it mixed with spinach and a bit of cottage cheese. Topped with Parmesan.
