I think nearly everyone likes soup and there are so many to choose from.

Mine are:

Hot and sour Chinese
Pea and ham
French onion

Butternut Squash or anything with Sweet Potato. At a push Carrot & Coriander or when in Ireland a lovely Cream of Vegetable.

A really heart scotch broth.

Also a massive fan of baked potato soup, corn chowder, minestrone, ribbilata, cabbage roll soup with minced beef and anything spicy or anything with noodles.

That was a hard choice! The first two sound relatively similar but I couldn't decide between them. I would love your recipe for this "Roasted red pepper, sweet potato, peanut and coconut, spicy with chilli" if you don't mind sharing @Gorgonemilezola?

Leek and potato. It was the first course at our wedding and was wonderful, tasted like the best home-made soup ever.
I also love garlic soup, no, you do not breathe dragon's breath for the rest of the day, if you cook the garlic correctly. Also reminds me of lunches when skiing and really easy to do yourself as no sautéing required.
Forgot about mushroom and chestnut, but really needs a good glug of sherry. There is something about mushrooms and sherry.
Had a fabulous clear soup when in a tropical country some years ago, with julienned vegetables. Turned out the "stock" was Marmite diluted with water, who knew?

The only soup I'm not that keen on is carrot and coriander. Other than that, I love soup. Lentil soup in all its forms is great - Turkish/Egyptian/Middle Eastern version with tomato, cumin and other aromatic spices and finished with lemon juice is one favourite, lentil soup made with the stock from cooking a gammon or bacon joint is another.

You can't go wrong with leek and potato. Sometimes I make that and add a lot of spinach at the end. Blend till smooth, add lemon juice at the point of serving. Glorious colour, excellent flavour.

  • Chicken soup, made with whatever chicken bones, carcasses and pieces I can forage from the freezer, with carrots, leeks, and onions (and definitely not cream of chicken soup, which is foul). Served over copious quantities of pasta.
