The perfect roast chicken dinner

I've been craving a proper roast dinner (it's the start of winter here in Oz) and I think chicken is the go. Much cheaper than the rest & such a fabulous meal.

To me a proper roast chicken dinner should have:

Homemade gravy from the chicken juices
Roast potatoes and pumpkin
Sage & onion stuffing, both up the bum and as stuffing balls roasted with the veggies
Peas

Parsnips are good but haven't seen a decent one in the shops yet.

What do you all serve with a roast chook?

Am in yorkshire but do not do yorkshire puds with chicken- partly because i was raised yorkshires with beef roast and season pudding with lamb (yorkshire pudding with dried sage and onion).
Also because there is not room on the plate.
Chicken basted with butter
Roast parsnips and roasted potatoes
Carrots braised with lemon peel and butter but if lazy will roast carrots too
Stuffing- in balls
A green veg sprouts or cavalo nero with bacon and chestnuts
sausages wrapped in bacon
Lots of gravy made with rioja

An alternative roast chicken we like-
brown outside whole chicken in a fry pan set aside.
Saute chopped aubergine , peppers, onions,3 cloves garlic, potatoes in a stock pot.
Add 100ml white wine and reduce
Add Ajvar sauce 2 tablespoons
Put in the chicken top up with chicken stock until 1/3 up chicken, put a lid and bake for 40 mins, take the lid off bake further 30 mins to crisp.
remove chicken, reduce sauce serve with flatbread.

Or you mad people serve with yorkshire pudding if you wish!!!!

I forgot about cabbage! Cheap & healthful. It's delicious with peas, or sauteed with leeks. That's another side dish to add to the list.

Pickled red cabbage! either bought or make your own and just have a spoonful on the side.

@Breadcat24 If you make a proper YP in a big tin you can put it on your plate with everything else on top.

@Buffypaws That's why you put mash on the plate, use it to pick up a couple of peas at a time.

Bread sauce
Parsley thyme & lemon stuffing
Roast potatoes
Pigs in blankets
Parsnips
cabbage or cauliflower
Seasoned Yorkshire puddings with sage & chopped onion
Gravy

I always do mine the Yorkshire way with the seasoned Yorkshire puddings & gravy as a starter, we normally have these while the chicken is resting.

My pigs in blankets are done with unsmoked streaky bacon.

I chop my onion for the bread sauce & leave it in when I add the milk, then add salt & pepper, I never use cloves or anything, maybe half milk half cream if I have any in the fridge.

@sashh Whoa how did I forget pickled red cabbage? Although I actually prefer that cold than with a hot roast.

We might have to start a thread on 'The perfect roast beef' or lamb etc and compare side dishes 😍

@Dustyblue and other Aussies, I am pleased to confirm that pigs in blankets (UK version with bacon, not US version with pastry) were available in Woolies last Christmas.

Warning - they were very popular and I visited three different branches to find them. I scored the last two trays! 😎

I miss paxo sage and onion stuffing though - DC hate the stuff here.

Also nice alongside roast veg - potatoes, sweet potato, onion, carrot and red pepper all seasoned with black pepper, salt and thyme all roasted together in one pan!

See, this is what comes from being raised in the colonies! We bugger everything up apparently!

To me, Yorkshire pudding is served with Roast Beef only. It's almost essential. And horseradish sauce.

Bread sauce goes with chicken. Nothing else. Peas go with roast chicken- don't ask me why, it just IS.

Roast parsnips are divine but can't find any in the shops despite it being winter.

Omg cauliflower cheese is awesome- I would eat that with any roast dinner. And they're cheap atm 😀

Bread sauce goes with poultry, so please include Christmas turkey! Not just chicken.

Mmm. Now I want to make another one with different sides. Like Cauli cheese. Shame no-one else in my house eats it.

I looked up those Woolworths pigs in blankets.

1). I wish Coles and Woolworths would tell you what shops something is available in.

2). Where the hell do pigs in blankets come from? According to Woolworth Au, Dorling Kindersley own the copywrite and Woolworths have to pay a licence fee. Bloody Woolworths. All I get when I search for pigs in blankets is a recipe. Dorling Kindersley gives me this:

Pigs in blankets are mini chipolata sausages, wrapped in bacon and cooked in the oven, @Dustyblue. We can buy them ready prepared in the UK, but I'm afraid I don't know if you can get them in Australia.
