Easy plant based meals please?

I see some lovely plant based recipes but they seem such a faff to make, also l can't eat chickpeas so lots of things are off the list.

Does anyone have any easy (quick) recipes that are healthy and nutritious without chickpeas please?

An easy beans recipe I found on insta that I'm enjoying:

Saute chopped onion until soft, then add some chopped garlic and a couple of handfuls of halved cherry tomatoes. Let them fry a little, then put the lid on and allow to soften for about 5-10 minutes. Add a tin of cannellini beans and enough water to almost cover the beans so they can warm through. Once warmed through, add a generous spoon of cream cheese and a couple of handfuls of baby spinach and stir through to warm/wilt.

We had on toast the oteher day but planning to have with jacket potatoes this week.

This dal is lovely and very easy.

Her vegan recipes in the Guardian are usually not too faffy...nachos and chilli

Tonight we're having flatbreads with halloumi and chargrilled veg. I'm using red onion, tenderstem broccoli and leeks which I slice into large chunks, rub with some olive oil and then cook in a hot pan. Then I slice halloumi, add some paprika and cumin and fry in a little oil. When i turn the halloumi over, I add chopped garlic, lemon juice and honey and stir together so it caramelises. And serve the whole lot on a flatbread.

I also like a vegetarian curry.

The Rukmini Iyer book The Green Roasting Tin has some excellent vegan recipes, & you can easily tweak some of those that contain dairy too. (Not vegan myself but like to eat mostly plant based main meals.)

I really like a standard tomato / onion based pasta sauce (add mushrooms / olives / whatever you have to hand if you want) with some tahini stirred in instead of using cheese or cream. Gives an excellent creamy texture & flavour plus adds nutrition Add little by little until it feels right & make sure to stir in really well.

Second the Hugh FW book, I make the chilli a lot in there.

All sorts of appropriate plant based recipes and you can tweak most to make them vegan too.

I came on to say the Green Roasting Tin too. Also, look up marinade recipes for tofu. I have it air fried with sweet potato chips & vegetables, or in stir fries.

Beans on toast.

Pasta with pesto (check ingredients if you are a vegetarian or vegan, not just someone who wants to eat more plant-based meals) and peas, could also add cherry tomatoes, mushrooms, spinach etc

If you eat eggs, there are any number of quick ways to make a meal with eggs and vegetables or with salad on the side.
