Vegetarian centrepiece for Christmas style roast dinner

We're having a family to Sunday lunch. They never cook a roast for themselves but I know they love them. I also know they didn't have a traditional Christmas dinner as were abroad and barbecued. So to make life easier for me as there will be 9 of us, I thought I'd do a Christmas dinner with all the trimmings, although with chicken & pork as one guest doesn't like turkey.
We have one vegetarian guest so am looking for ideas for their 'centrepiece' Happy to make a larger serving so that others can have some too. I know vegetarian guest gets anxious about having enough protein so something containing protein would be great, and it should go with roast potatoes and the variety of typical Christmas vegI'd rather make them buy.

I have a Christmas pudding left over from Christmas (always make vegetarian to cover any last minute guest changes and will make an apple crumble as an alternative.

I am mostly veggie, we did this as the veggie main for Christmas last year and it was delicious.

I really like theses stuffed onions. These are good because they have the nuts for protein, aren't too heavy and go well with the regular roast sides. I've also done similar with red onions and subbed the nuts in the stuffing for Stilton.
