Healthy quick simple recipes

I realised after work I just cannot be bothered with cooking. I can make things like lasagne , chicken pie etc but I just don’t have time and inclination for meals which take a while to make. I dislike eating freezer food and feel guilty if I feed my family junk. Does anyone have simplistic recipes that children will eat and relatively low processed.
some of the things I already make are salmon stir fry, Eggs chips and ham, paprika drumsticks and rice/potatoes.

Tray bakes are really easy and hands off.

I like to cut up a pack of mixed peppers, couple of courgettes, cherry tomatoes and some onions, add seasoning, you can change it to do different flavours easily. Then roast in a hot oven. I tend to cook a protein separately to suit vegetarian/non-vegetarian, but again, anything you can just put on a tray and put in the oven and walk way!

Smoked salmon pasta ( just add some peas to the pasta for the last couple.of minutes. Turn off the heat add smoked salmon and stir in cream and parmesan.

Home made pesto pasta. Whizz up basil, parmesan, lime nuts, garlic, oil, lemon juice and stir into pasta. Tomato, basil.and mozarella salad on the side.

Dahl. Takes a while to cook to but you don't have to do much.

Pasta with roast veg and halloumi.

Cooked rotisserie chicken with salad and new potatoes.

Salmon with a bit of teriyaki sauce on it, veg fried rice and Pak choi.
