How to make salmon more 'interesting'

My youngest is picky with fish and only seems to like cod in breadcrumbs or salmon (fillets fried or baked in oven). Other kids complain that it's boring. Any suggestions for making it taste a bit more interesting. No-one here likes dill btw. Or tomato-ey type sauces. 🙄

Salmon en croute is lovely and easy if using pre made puff pastry.

Ooh, would you mind telling me how to make it? I've never made it, but I do like it. What is the sauce that they have in them? It seems really expensive to buy nice ones that are ready made, and when I bought cheap ones there was hardly any salmon in them.
(Though I am also thinking that salmon fillets are getting smaller... I get them in 4 packs in Aldi and sometimes I look at the 4 pack and think that it could have equally well done as a 2 pack!).

I like to spread pesto, Thai green curry sauce, or teriyaki sauce on before roasting. Super quick and easy!

It isn't the best is it?! We have been given mackerel freshly caught in the freezer too- he won't touch it.

Spread with pesto (I prefer red pesto with salmon but green works too) then top with breadcrumbs.

I also like it brushed with pomegranate molasses. Works well with chicken and pork chops and in salad dressings if you're worried about using it up

I wrap mine in foil parcels with butter or olive oil and a spoonful of sweet chilli sauce. My kids like it and it's very quick and unmessy in the oven.

Poach it in orange juice with tarragon. It’s delicious and lovely flavours.
