Frozen birthday cake, buttercream.

I have made my friend a birthday cake and crumble coated it and froze it as I am working away. Can I put the buttercream on while frozen and then defrost it? How long will it take to thaw out?

Yes in theory but you must work quick as the frozen cake will firm up the buttercream as quick as you are putting it on so not loads of time for smoothing etc if you need that.

It's hard to say how long it will take to thaw, depends on size and warmth of room it's thawing in, I'd put it in a cardboard box though if you can and into a bag, that will reduce the condensation that forms from being on the buttercream itself to hopefully on the bag/box, I'd be giving it the best part of 6/8 hours say.

Yes when I worked at a cafe I used to ice the cakes frozen and let them defrost. I found it easier because crumbs wouldn’t flake off.
