What do you do with your left over roast chicken?

I have about half a roast chicken left over this week and I really really want to do something nice with it. Usually I just make curry from it or we have fajitas, but I would like a change and I was wondering if anyone had some nice recipies for for left over chicken.

I make chicken pie.

In fact, when I roast chicken, I always roast two of them, so that I have plenty of leftovers.

It is dead easy to make.

I make a chicken risotto and then I boil the bones and remains a make a noodle broth with the stock. One chicken = 3 meals.

Put it in the fridge with plans for risotto and stock. 5 days later throw in bin.

chicken risotto - I use the bones to make the chicken stock for the risotto

also do curry and fajitas

and chicken sandwiches

or put it on pizza

I just have it cold next day with bubble & squeak - I always make sure I overdo the amounts on the whole roast dinner!

chicken enchiladas - a really simple filling of shredded chicken, grated cheese and yoghurt - or you can just mix with cottage cheese. Sometimes I add chopped picked jalapenos and/or coriander

roll up in wraps. put in dish, cover in tomato sauce, top with grated chedder, bake in oven for 25 min

i make soup with the carcass

chicken and egg fried rice with peas and broccoli with shredded left over chicken

risotto

or put the chicken back in teh soup to bulk it out

Nigella has a nice recipe where she fries up some bacon / lardons and adds that (with the olive oil it's been fried in) to shredded left over chicken and spinach leaves, then she chucks a couple of tablespoons of red wine vinegar in the bacon pan, lets it bubble for a minute or so and then pours that over the top. Makes a lovely salad.

I either make that or a chicken pie - leftover chicken, broccoli, white wine sauce and puff pastry top.

chicken & chorizo baked rice
chicken byriani
chicken soup
small chicken pies (good for freezing)

me and ds had a roast chicken tonight and there is now nothing left except the bones which will be turned into soup tomorrow. Maybe we just buy REALLY small chickens

That's why I always cook 2 chickens, beansmum.

We strip one chicken and make inroads into the second with our standard Sunday lunch.

The leftovers go into chicken pie:

Melt butter and work into it a couple of chicken stock cubes. Add flour to make a thick paste. Add milk and make a sauce. Add cooked chicken and frozen peas/corn. Put into a pie dish and top with puff pastry. Cook in oven for about 30 minutes.

soup! We never have much left. We devour chicken in the Mars household. We love the wings, the bits underneath, the breast, the legs.....

I make a chicken risotto the next day. With an onion, red pepper, garlic puree, red pesto...It's yum. I Prefer it to the roast, but my children are very enthusiastic carnivores. I will never make veggies out of them..
